The modular buffets offer you professional standards and design at the same time, with maximum flexibility for solo, line or free-flow arrangements. With the modules, a complete food service can be realised in a short time or modified and extended as required. Perfect in function for large-scale catering, company catering, hospitals and armies.

For the system concept, the Rolling Buffets are designed with fully-fledged catering technology in the Gastronorm basic size 1/1 and this for all system variants such as bain-maries, cooling troughs, cooling compartments and even for the under-mounted refrigerators. The Rolling Buffets thus meet the highest demands in terms of form and function. 

Rolling Buffet - The System

The Rolling Buffet system, as a free-flow system, offers the perfect solution for professional requirements and high-quality design. With a range of functions, from neutral, hot with bain-marie, built-in system carriers or hot-keeping plates, varithek® and front cooking, cold with cooling troughs (still or circulating air) or refrigerated display cases, drive-in buffets, cash, beverage, corner and tray/cutlery buffets. Flexible modular design for any number of diners.

  • 1 - Select the desired function.
  • 2 - Select the desired length from the substructure.
  • 3 - Select the appropriate display. For some functions we recommend certain displays.

Hot buffet with 2, 3, 4 or 5 bain-maries (can be heated wet or dry), individually adjustable for serving hot food; optionally with hinged-door cupboard, open cupboard or heating cupboard, optionally with central water drain. Choice of top unit, 1-level, 2-level, open, closed, with light/heat in stainless-steel shelf on request.

Recommendation: Top unit with light/heat.

Rolling Buffet - for years one of the most successful buffet solutions in the Rieber portfolio. But in addition to classic hot and cold serving, the product line is now complemented by a complete kitchen: the ACS 1600 O3 Rolling Buffet.

The latest plasma technology for even more odour elimination is integrated into the proven Rolling Buffet line. The extraction system is designed in such a way that the vapours produced during cooking are extracted from 3 sides. The air is cleaned in 2 steps (3-sided fume extraction): The left and right side panels contain the high-performance grease separators and two removable grease trays each. The low-noise radial fans, the ozone generators for odour cleaning and four activated charcoal filters are located in the substructure.

The "kitchen" impresses with its patented filter system, which is easy to clean because it can be completely removed and put in the dishwasher. The tightly welded setting niche offers space for up to 3 varithek® modules.

In the substructure, there are also two compartments to H3 hygiene standard, each with 8 support ledges. These compartments can be ordered heated, cooled or neutral.

Cook in front of the guest with 2, 3 or 4 varithek® elements in the EST built-in system support. Keeping hot, woking and cooking with induction, grilling, keeping cool - all this is possible with the unique varithek system. Equip the system rack as required (2, 3 or 4 elements).

Attachment: For front cooking, there is only the front-closed attachment with plate trays.

All showcases are operated with convection trough cooling. Refrigerator in the buffet. Cooling range +5 °C to +8 °C.

Tray cutlery buffet for providing cutlery, napkins, spices and trays.

8 cutlery containers for 100 cutlery pieces each, 3 small containers, 2 additional cutlery quivers and an attached napkin dispenser make this buffet a ready-to-use station.

For intermediate use between two units, space-saving especially for inserting dispensers - in lengths 820 / 1050 mm.

In 2 lengths and versions. Either with only 1 cash desk with 2 cable bushings or with an additional shelf at the back with a cupboard underneath. With 2 sockets 230 V.

Corner buffet

Corner buffet

Corner buffet to complement or design 90° or 45° installations. 

Except for the inside corner buffet 90°, all buffets have a closed wooden substructure all around. Tray slides can be folded down. Corner buffets must be mechanically coupled. No power connection.

Electrical connections

All buffets are equipped with their own "on-board electrics". Exception: intermediate and corner buffets. These are bridged by connecting cables. All other buffets can be electrically coupled one after the other. Starting via supply cables to the right-hand end (seen from the operator's side) of the first buffet. Then couple from buffet to buffet.

Attention: Max. 10.5 kW (3.5 per phase) can be coupled in this way. Do not only count the buffet value but also all set or to be set devices. If the above value is exceeded, a different supply cable and the necessary CEE socket must be provided (enquiry).

The attachment variants

All tops are made of round stainless steel tubing and are hygienically seamlessly welded and plastered. The safety glass is held in place with special cast glass holders.

Individualisation options (length/displays/cladding)

Choose between 3 substructure lengths: 1270 / 1770 / 2270 mm. Each substructure can be combined with different displays. The tops are not permanently installed and are easily removable. More than 20 variants meet all requirements and integrate into any planning. All modules can be used individually or in combination. Function bridges in the modules contain the proven and easy-to-operate technology.

Technical information & Design

Technical information

All Rolling Buffets are electrically wired ready for connection and are designed with a 380 volt connection. All technical connections, function switches, digital displays are always combined in a function panel, separately protected and easily accessible if required.

The floor clearance on castors (Ø castors 125 mm) is always 160 mm; a pedestal version is also available on request, or closed with a plinth panel.

Design

The extensive range of models, all of which have a stainless steel finish as standard, offers many design options that can be perfectly integrated into any interior design. Your individual colour preferences can be reflected in the front and side panelling; any wood decor is possible. Very exclusive, also transparent lacquered decorative surfaces made of stainless steel in the front panelling and coloured top frames. Instead of wood panelling, mirror glass is also possible, with text or image motifs on request, according to your company design.
