Under the varithek® brand, Rieber offers a family of system components based on the Gastronorm standard. Working together, these modules ensure highly efficient processes for storing, preparing, cooking and serving food and beverages.

The central Front Cooking airclean3d module can be flexibly combined with a wide range of additional modules. These include solutions for hot holding, including advanced infrared technology, cooling, as well as neutral, corner, cashier and insertion modules. Each buffet configuration is individually tailored to the available space and operational requirements, creating a complete kitchen integrated directly into the buffet – visible and interactive for guests.

All module versions are available either as stationary units with height-adjustable polymer feet or as mobile units with stainless steel castors. The mobile version complies with DIN 18867 Part 8 and is equipped with four stainless steel twin swivel castors with brakes, a wheel diameter of 125 mm, and plate mounting.

Cooking modules for varithek® Buffet

When combined with the varithek® Buffet system, the cooking modules provide maximum flexibility for virtually any cooking application. Up to three modules can be inserted into the recessed, fully welded installation well, allowing individual combinations and quick module changes. Standard 400 mm modules can be used directly, while GN 1/1 modules can be integrated using the AST system carrier. Whether cooking, grilling, frying, wok cooking, steaming, chilling, hot holding or deep-frying, the modular varithek® system offers the right solution for every application.

The extensive range includes ceramic glass and induction hobs, hybrid hot/cold plates, grill plates made from the unique SWISS-PLY multi-layer material, as well as combination pasta cookers and fryers. All varithek® system modules are standardized and fully GN-compatible, ensuring maximum flexibility and seamless integration.

Thanks to full compatibility with the GN system, thermoplates® can be exchanged within seconds. Switch from a thermoplates® teppanyaki grill plate to a cooking or hot holding plate without cleaning a conventional grill surface. After use, the thermoplates® can simply be cleaned in the dishwasher. Separate thermoplates® also allow fish and meat to be prepared simultaneously and hygienically, each with its own cooking time. Since the energy source remains unchanged, only the GN thermoplates® need to be replaced, saving time and reducing cleaning effort while providing maximum mobility and operational flexibility.

varithek® stands for an economically efficient kitchen solution designed for today's foodservice operations.

Customization options (length, superstructures and cladding)

  • The standard modules are available in dimensions of 1180 × 780 × 900 mm, based on pallet dimensions for efficient transport and handling. Custom module lengths are available on request to meet individual project requirements.
  • The standard cladding features a timeless Resopal 0901-60 black finish with a 6 mm solid-core panel and black edge. Additional Resopal finishes are available on request at extra cost.
  • Modules are supplied with height-adjustable stainless steel feet with chrome-plated foot glides, providing 160 mm ground clearance. An optional stainless steel plinth panel is available for a clean, seamless appearance.
  • Superstructures are generally defined by the module function but can also be configured individually to suit specific requirements.
  • Alternatively, all modules are available in a mobile version with four twin swivel castors with brakes, featuring 125 mm polymer wheels.
